3/4 cup sugar or brown sugar (I like this the best)
1/4 cup water
In one quart glass/microwave safe bowl, combine all ingredients, tossing until coated. Cook in the microwave on high 5 to 6 minutes. Stir once a minute for three minutes, then stir every 30 seconds, watching carefully as the sugar will burn quickly. Once the nuts are caramelized, pour onto lightly greased (or use parchment - no clean up!!) rimmed baking sheet. Separate and let cool. They cool quickly. Store in an airtight container.
I have doubled and tripled this recipe. It works fine. Of course, use a bigger bow but the timing is the same. Be very watchful the last couple of minutes, it will turn to burnt sugar so fast!
Oven baked - 400* on parchment lined rimmed baking sheet for 10-15 minutes. Stir often. Watch the last few minutes, so they won't burn.
