Marta's Cookies & 90 minute Cinnamon Rolls

Martas - A Spice Cake Cookie


Preheat oven 350*  Lightly grease cookie sheets

In large mixing bowl, cream together for 4 minutes:
1 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 cup buttermilk (or 1 c milk plus 1 teas vinegar)
1 teas. vanilla


Add dry ingredients and fold into creamed mixture:
3 3/4 cup flour
1 teas. baking soda
1/2 teas baking powder
1 teas cinnamon
1 teas nutmeg
1/2 teas allspice
1/4 teas ground cloves
1/2 salt
Optional: Add 3/4 cup raisins or nuts.

Mix well.  Drop by rounded tablespoon onto greased cookie sheet.
Bake at 350* for about 15 minutes. These cookies have a cake-like texture.


My Very Best Cinnamon Rolls
 From start to finish, these will only take about 90 minutes!

In large bowl, mix until dissolved, cover and let stand 30 minutes.
1/3 cup sugar
2 TBSP yeast
1/2 cup oil
1 1/4 cup warm water

Add to yeast mixture,

2 eggs, blended
1 1/2 teas. salt
5 1/4 cup flour

Knead for 5 to 7 minutes (or use dough hook on mixer) on lightly flour surface. Roll to 1/4" thick. Brush with melted butter, then sprinkle with brown sugar, cinnamon (I make it DARK with cinnamon). Raisins or chopped pecans optional.

Roll as a jelly roll, seal edge. slice 1" thick. Place cut side down on parchment or ungreased pan. Cover with a towel and let rest 10 minutes. Bake at 425* for 12-15 minutes.
While still warm, frost with glaze:
2 cups powder sugar
1/4 cup HOT water
1 teas. butter
1/2 teas. maple or vanilla flavoring, optional
